Hong Kong, August, 2024 — Cornerstone, the contemporary bistro from The Arcane Collective, is introducing a new seasonal menu featuring dishes inspired by Chef Neal Ledesma’s recent trip to Australia. Staying true to Cornerstone’s core ethos, each new dish is centred around quality seasonal produce and bold flavours.
Hong Kong, August, 2024 — Cornerstone, the contemporary bistro from The Arcane Collective, is introducing a new seasonal menu featuring dishes inspired by Chef Neal Ledesma’s recent trip to Australia. Staying true to Cornerstone’s core ethos, each new dish is centred around quality seasonal produce and bold flavours.
Earlier this year, Chef Neal took a trip to South Western Australia alongside The Arcane Collective founder Chef Shane Osborn to take part in the esteemed Taste Great Southern food & wine festival. Amidst a jam packed week of cooking and entertaining was a jam packed schedule of eating and tasting, visiting local farmers and generally being heavily inspired by the abundance of fresh, flavourful produce this part of the country is well known for.
The results and influence of this trip can be tasted in Cornerstone’s latest menu, which features fresh starters such as a Blue Crab ($198) and baby gem salad layered with avocado, shio kombu and preserved lemon mayonnaise, and a robust Beef Tartare ($178) elevated with fermented chilli, mushroom and soy yuzu dressing. A perfectly summery Grilled Peach Salad ($158) is punched up with smoked stracciatella and a tofu walnut pesto. Seared Yellowfin Tuna ($168) is very refreshing, served with a sesame sauce, coriander, chilli and finger lime.
For main courses, the Aussie pub classic Chicken Parmigiana ($198) has been given a modern twist and is adorned with mortadella ham and indulgent mozzarella. The iconic Cornerstone Wagyu Steak Sandwich ($278) has also been given a makeover, reinvented with a punchy gochujang mayonnaise.
Cornerstone’s mainstay of Grilled Fremantle Octopus ($278) still features with tonnato sauce, courgette, tomato and fennel; and a Pan Fried ‘Humpty Doo’ Barramundi ($248) is served with an eggplant yogurt, bell pepper, cucumber and carrot. In keeping with Cornerstone’s commitment to using the most ethically sourced meat and fish available, the barramundi is sustainably farmed in Australia’s Northern Territories Farms.
For those seeking plant-based delights, the menu offers options such as the Chickpea Mushroom Croustillant ($188) with mango chutney and a perfectly satisfying Homemade Spaghetti ($188) with parmesan, whey, black truffle and pepperberry.
And for dessert, the most quintessential of all Australian sweet treats - Coconut Lamingtons ($118) with mango jam, pandan chantilly and passion fruit.
The dishes on the new menu will be updated seasonally, with a hotly anticipated Braised Kangaroo Tail Pasta already pegged for Autumn.
As an added treat, Cornerstone is extending a special weekday offer, inviting patrons to indulge in a "buy one, get one free" promotion on all Australian wines from Monday to Friday.
“The trip to Australia with Shane was truly inspiring,” says Chef Neal Ledesma, “Australia is completely spoiled with some of the freshest produce I have ever sampled - from fruit and veg, to seafood and high quality meats. I was so excited to return to Hong Kong and implement the flavours I had tried into our menu at Cornerstone.”
