The one-Michelin-star flagship of The Arcane Collective has evolved to become a leader in sustainable dining within the city and reflects founder Shane Osborn’s forward-looking vision of a dining experience that’s conscious of its social and environmental impact.
Over its decade as a culinary mainstay within Central’s fine-dining scene, Arcane has enjoyed close relationships with trusted regional suppliers, premium specialists, and artisan farmers and growers that honour the restaurant’s commitment towards responsibly sourced produce and sustainable practices. In celebration of these cherished partnerships, Arcane presents three exclusive dinner menus highlighting the meticulous, flavour-forward dishes that have garnered city-wide fans with a dedicated spotlight on vendors that have been integral in Arcane’s exceptional journey.

This milestone celebration is partly dedicated to them. Each menu has been carefully prepared to showcase their exquisite produce in signature Arcane flavours. As we continue to grow, I look forward to many more years of collaboration.”
Gourmet en Provence Menu - 11-16 November
Three limited, five-course menus will rotate weekly in November, available for dinner exclusively. Beginning with homegrown fine-food specialists Gourmet en Provence, the fresh French produce will be complemented by a bubbly accompaniment of RSRV Champagnefrom 11th to 16th November. Savour the likes of Potato Blinis with Crab Mayonnaise, Kaviari Caviar, Sour Cream, and Chives; Sauteéd Langoustines with Cevennes Onion, Sweet Garlic Cream, Toasted Almonds and Thyme; and Tortellini of Broccoli and Cevennes Onion with Pinenuts and Black Truffle Cream. The menu continues with a Herb-Crusted Limousin Veal Rump with Roast Butternut Squash, Chestnuts, and Chanterelles, before concluding with one of Arcane’s most iconic desserts over the years - the Yuzu and Lemon Posset with White Chocolate Tuile, Blood Orange, and Yoghurt Ice Cream.
Waves Pacific and To-Plate Menu - 18-23 November
This strong start is followed by a collaborative showcase between Waves Pacific, who specialise in supplying premium ethically sourced seafood and meat, and To-Plate, a premium Australian produce supplier, from 18th to 23rd November. The menu is topped with a rich selection of exquisite flavours opening with Australian White Asparagus with Taiyouran Egg Mayonnaise, Ikura, Karkalla, and Potato and Spring Onion Salad. Taking diners on a culinary journey of exceptional ingredients, it spotlights Lightly Seared Yellowfin Tuna with Edamame Hummus, Pan-Fried Humpty Doo Barramundi with Clams, and Roasted Mayura Wagyu Rump Cap 7+ with Celeriac, before ending on a delightful note of Cuvee Chocolate Surprise with Vanilla. To enhance the freshness of each ingredient, a pairing selection from Liber Wines will be served.
Farmhouse Productions Menu - 25-30 November
Concluding the grand celebrations, a limited menu from 25th to 30th November will serve farm-fresh produce from Farmhouse Productions founded by Chunling Fong, straight from the city’s backyard in Kam Tin. Dishes featuring local-inspired flavours and ingredients will be served with a curated selection of Chinese and Japanese wines. Starting with Warm Organic Local Vegetable Salad with Black Truffle Ricotta or “Drunken” Ma Yau with Cevenne Onion Fondue and Pickled Black Radish. Meanwhile, Sauteéd Potato Gnocchi with Pinenut, Squash, Parmesan Cream, and Shaved Black Truffle, and Yellow Chicken with Dau Miu, Yunnan Mushrooms, Oolong Tea Emulsion, and Garlic Chives complete the menu. A dessert of Fig Leaf Ice Cream with Hong Kong-style French Toast and Dulce de Leche wrap up this delectable experience.
Arcane’s 10th Anniversary Tasting Menus are all priced at HK$1,388/ person with optional wine pairing for an additional HK$688/ person + 10%.
